Recent health complications have inspired Chef Chris Blanco to make some changes to his farm to table restaurant, Stock. Stock, which used to sell brunch and lunch items with a heavy Southeast Asian influence, will now go by the name Papa’s Hot Potatoes and will serve only plant-based offerings!

Papas Hot Potatoes will operate as a vegan fast-food style restaurant in which guests can build their own baked potatoes. At Papas, diners will have the choice of 5 different baked potato combos, like a Washington russet potato with vegan queso, pickled onions, and smoky red chili, or a combo with cashew sour cream, diced red cabbage, and green chilis. Additional add-ons like cauliflower rice, sweet potatoes, pickled beets, guacamole, coconut bacon, and garlic aioli can also be included to really jazz up your order! Papas will also serve alcoholic beverages like beer and wine, milkshakes, kombucha, and coconut water. All of the ingredients used in Chef Blanco’s recipes are homemade, fresh, organic, and local when possible.

When asked why he decided to make such a drastic change to his restaurant and menu, Blanco responds, “Last year I was presented with health challenges chronic and verging on serious; I wanted to try eating a different way. My switch over the past year to a whole food plant-based diet has benefited my health and well-being in incredible ways. I can’t even remember having this much energy or focus, and while it can’t all be attributed to a dietary choice, it has served in a catalyst in many ways.”
